- The larger bottom chamber is filled with cold water and placed on the heat to boil.
- The smaller top kettle holds dry, high-quality black tea leaves (preferably hand-picked from the misty Black Sea mountains of Rize).
- The slow infusion process — once the water boils below, a portion of it is poured over the dry leaves in the top kettle, creating an incredibly rich, dark tea concentrate (dem). The top kettle is placed back on top, and the heat is lowered. The steam rising from below continues to gently heat the concentrate, letting it steep perfectly for 15-20 minutes.
